TOLOCHA CHEESES

Cheese production at TOLOCHINSKIY SERIES, a subsidiary of OAO Orshansky Meat Processing Plant, began in 1957 with the production of just two types of Dutch group cheese: "Poshehonsky and Kostroma cheese.

In 2008, a new cheese shop was commissioned at the plant. The modern equipment of the Polish company "OBRAM" which allows to receive and process milk in an effective, automatic mode, to make cheese grain in a closed mode, to make salting and packing of ready cheeses - different forms, contents and tastes is installed in it. The new technological equipment completely eliminates the touch of human hands during cheese production, starting from milk reception to cheese wrapping in the foil. The commissioning of modern equipment enabled the enterprise to increase the range of products and start producing Russian group cheeses.

Today, the range of cheeses includes up to three dozen items. By mass fraction of fat from 30 to 50% in dry matter. By maturation period up to 4 months. Recently, the company has mastered the production of an elite line of traditional European cheeses: Dutch cheese 'GOUDA', Austrian cheese: 'TILZITER', Swiss cheese 'MAASDAMER', production of cheese fillers was mastered.

In a year the company produces:
Up to 1,800 tonnes of rennet cheeses; 330 tonnes of butter; 6,700 tonnes of nanofiltered whey.

Since 2014, a nanofiltration whey concentration line has been in operation, enabling the production of whey with a solids content of between 18 and 20 per cent. The new line has the capacity to process up to 150 tonnes of whey per day.

Since 2017, the company has been packaging cheese in the form of bars and segments weighing between 200 and 300 grams. The cheeses are packaged in a modified atmosphere, allowing the product to remain fresh for three to four months.

The company pays special attention to quality: a system of quality and safety management of production and storage of cheese and butter on the basis of hazard analysis and critical control points (HACCP) corresponding to the requirements of STB 1470-2004 was introduced and the Polish line for production of OBRAM cheese, put into operation in 2007, allows to produce high quality product.

One of the main directions of the company's strategy is to increase export potential. TOLOCHINSKIY SERIES, a branch of Orshan Meat and meat processing plant, supplies products to the whole Belarus and also exports some of its products to Russia. The share of export in the total sales volume is 48.7%.
